A crisp, elegant, refreshing rosé, with delicious aromas of red cherry and wild strawberry, echoed on the beautifully textured palate through a vibrant finish. The grapes were picked at the optimum harvesting date to ensure they had reached the perfect level of ripeness and concentration. The timing of the picking is the most crucial step in the winemaking process. The delicate pale colour is obtained through gentle, direct pressing. Long, slow fermentation takes place with selected yeasts at cool temperatures, and this technique helps preserve the purity of fruit and fine aromatics. The wine was aged in cement vats on its lees for three months to impart delicate texture.
